About Danny - Barista Training Consultant for Ebenezer Coffee

Danny has been with the coffee industry since mid 2005. He started his coffee career with a US Multi-National Corporation with 100,000 accounts worldwide. He was instrumental in setting up the coffee business for US Foodservice Company in the region, with mainly 5-star hotels in Singapore, Malaysia and Bangkok. Over the tenure, Danny received his certification as a TAFE certified barista from the Coffee Academy. Currently, he is also a certified Barista and an authorised trainer with the Specialty Coffee Association of Europe (SCAE). He continues to share his passion and knowledge of coffee and barista skills in the following courses conducted at our premises." In 2007, his passion drove him to finally start his own business cafe lounge in Raffles Place. He continues to hold coffee appreciation and barista training courses for the corporate and coffee enthusiasts. He was invited on several occasions to provide public coffee appreciation talks in Singapore National Arts Museum, training Baristas for the first night F1 race in Singapore etc.

COURSES

There are three levels of coffee courses which promise to enlighten, enrich, and enhance anyone who wants to know more about coffee and the skills needed as a Barista.

Module 1 - Coffee Appreciation (2 hours) - Fee: $50 per person (minimum of 15 person for class to be conducted)

This course is for the general public who wants to know how to appreciate espresso-based coffee, understand the fundamentals of appreciating its process of roasting, making, and tasting. Most coffee appreciation courses teach only coffee cupping, trying out single origin coffee. This course goes further by ensuring that you will know what to look out for when you buy a cup of cappuccino and cafe latte. At the end, you will surely know how best to get the most out of your bucks when you order a cuppa over the counter from any cafe in the world.

Module 2 - Basic Barista Course (3 hours) - Fee: $200 per person (limited to 4 person per class)

This course is for the passionate few who are either already working in a cafe and does not seem to get it right, or who are about to embark on a career as a professional barista. I congratulate you on taking up this course as it demonstrates your keen desire to learn. You will be put through the paces regardless of your experience level. You will unlearn some bad habits and build proper habits and skills to turn the espresso-based coffee into a work of art. You will understand the science involve, and appreciate the art and labour of love in ensuring the right grind in preparing the humble espresso. At the end, you will finally appreciate the challenges of a Barista and discover the joys of chasing the elusive God-shot and how to stretch that beautiful silky-smooth milk for your cappuccinos and cafe lattes. You will be graded and assessed with a simple written test and graded on practical in accordance with the WBC standards.

Module 3 - Advance Barista Course (Coffee Art) (3 hours) - Fee: $200 per person (limited to 4 person per class)

This course teaches more than latte art. The attendees should already possess the skill to confidently and consistently prepare cappuccinos and cafe lattes in the right proportions of coffee, milk and foam. He or she now wants to hone their pouring skills to serve and present a beautifully made coffee as an art to their customers. It involves lots of passion, perseverance and practice. In this course, you will learn the pouring of a rosetta, a heart, etching, and with chocolate based espresso sauce for enhanced coffee art.
